Creamy Chicken Soup

Creamy Chicken Soup

4 chicken thigh fillets (cut into small chunks)
4 cups chicken broth (homemade, stock cubes, or canned broth)
1 small onion (finely chopped)
1 clove garlic (crushed)
2 medium carrots (roughly chopped)
2 stalks celery (finely chopped)
1 small can corn
1 cup pasta shells (or any small pasta you have)
1 cup cream

Heat oil in large pan. Add onion and garlic and cook for about 2 minutes on low heat (until onions are soft). Add chicken, carrot, corn and stock and bring to a boil. Cover and simmer on low heat for about 20 minutes. Add pasta and simmer uncovered for about 10 minutes or until pasta is tender. Stir in cream and heat through without boiling.

We’re Going Pink For October

Both Dine Without Whine and Healthy Menu Mailer are going pink for October for Breast Cancer Awareness Month. Have you been affected by breast cancer? It seems almost everyone has had a friend, relative or co-worker diagnosed. We lost my husband’s aunt this past spring to breast cancer, so this project is near to our hearts.
During the Month of October both Dine Without Whine and Healthy Menu Mailer will be donating 10% of every sale made to the Susan G. Kolman Foundation for Breast Cancer Research. (www.komen.org)

New Blog - What Do You Think?

Breakfast Bagel Casserole

Breakfast Bagel Casserole

3 plain bagels (thinly sliced)
12 eggs (beaten)
1/2 pound cooked ham (diced)
1/4 cup finely chopped onion
1 tablespoon fresh chopped parsley
1 cup grated cheddar cheese
1 cup milk
Salt and pepper to taste
2 tablespoons butter

Place butter in heavy skillet. Add ham and onion. Sauté over low heat until tender (approximately 2 minutes). Set aside. Slice each bagel into 4 thin slices. Arrange 6 bagel slices at bottom of lightly greased baking dish. Top bagels with ham and onion mixture. Then top with cheddar cheese. Finally top with remaining bagel slices. In a separate bowl whisk together eggs, milk, parsley, and salt and pepper to taste. Pour the egg mixture over the bagel layers. Bake at 375F for approximately 30 minutes or until eggs are firm and cooked through.
