Have Potatoes? Let’s Make Dinner!

The US Potato Board recently contacted me.  They know that economic times are hard and families may be forced to make cutbacks to their budgets, but there is one thing no family should have to sacrifice—nutrition. In order help parents provide nutritious food for their families, the US Potato Board created www.MomsDinnerHelper.com, an online recipe resource and blog.

According to the US Potato Board, potatoes are one of the least expensive items in the produce department, and one of the most nutritious. In fact, in most places you can still get potatoes for less than 25 cents a spud – and with only 110 calories in a medium potato that’s naturally fat-, sodium- and cholesterol- free, the tater can’t be beat!

Introducing Miss Annika Rose

I am excited to share that Annika Rose (pronounced like Monica without the M) joined our family on Oct. 14th at 8:10 p.m. weighing 8 pounds 10 ounces and 20″ long.  Here are some pictures to enjoy .  She is our first girl and we are very excited to have her join our family!

Calling All Banana Cake Fans

Do you like banana cake or bread as much as our family?  It is kind of one of those either you love it or hate it foods.  My boys LOVE banana muffins. The 12 muffins are usually gobbled up in about an hour or less.   Here is the easy recipe I use:

 Banana Muffins
1/4 C. Melted Butter
1 C. Sugar
1 Egg
3 Bananas Smashed
1 1/2 C. Flour
1 t. Baking Soda
1 t. Salt
Extra melted butter and cinnamon sugar

Beat butter, sugar and egg together.  Add bananas.  Add flour, soda & salt.  Mix well just until blended.  Pour into muffin tins lined with paper linings.  Bake at 350 degrees for 20-25 minutes.  Cool for 5 minutes.  Brush with melted butter and sprinkle with cinnamon sugar.

Laptop Lunhes

Seeing that I work from my laptop, I’m thinking my kids would love LapTop Lunch Boxes - if even just for the name…  I like them for many other reasons - they can be reused, are lead free and make lunch fun!  I plan on purchasing a couple for the boys real soon.  If you already own one please let me know what you think in the comments section below.  And once you have one, here are some great recipes to go along with it!
