Comforting Veggie Noodle Soup
Serves: 5

It’s name says it all…a comfort food.  This veggie noodle soup is made with fresh veggies and of course milk for calcium and vitamin D.  Exceptionally good during chilly weather, this soup nurtures both body and soul with healthy, low-fat ingredients that will satisfy any picky eater. 

Ingredients:
4 cup of low sodium chicken stock
1 cup of favorite pasta
1 carrot, washed, peeled and cut in half 
1 celery stalk, washed and cut in half
1 green onion, washed, roots removed and cut in half  
1 clove of garlic, peeled left whole
1 tbsp of olive oil
1 cup 1% milk
Salt and pepper to taste

In a medium, heavy bottomed sauce pan, boil the stock with the vegetables.  Stir in the pasta and olive oil.  Bring to a boil.  Turn down heat and simmer until tender for about 8-10 minutes.  Add milk.  Simmer until you have porridge-like consistency and the pasta is tender, but firm. 

Taste and adjust with salt if necessary.
