Apple Cider Slaw – Weight Watchers Friendly

June is filled with graduations, weddings, and picnics and I needed something to take to an event recently.  I wanted it to be light and not have a flavor that would overwhelm the other dishes at the event.  Being a lifetime Weight Watcher, I like to also have something that is low in calorie to off set all the high fat dishes that will be tempting me.

This apple cider slaw recipe fits the bill perfectly.  It comes in at only 60 calories for 1/2 cup {or 2 points plus}.  It has a great crunch to it and the dressing is light.  Very refreshing served next to your favorite grilled foods!  It is best if chilled for about 2 hours before serving.

Apple Cider Slaw

  • 1/4 cup apple cider vinegar
  • 3 tablespoons sugar
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt
  • 4 cups cabbage slaw mix
  • 2 medium firm red apples, cored and coarsely chopped {about 2 cups}
  • 1 cup diced celery
  • 1/2 cup sliced almonds, toasted

For dressing combine vinegar, sugar, oil, celery seed and salt in bowl; whisk until blended.

For slaw, place slaw mix in large bowl.  Add apples celery and almonds to slaw mix.

Pour dressing over slaw, toss to coat.  Cover and refrigerate at least 2 hours to allow flavors to blend.  Yields about 14 servings.
