Apple Jack Cookies

My 1st grade son brought home a recipe for Apple Jack Cookies the other day from school.  They made them to learn about measurements and he insisted I make some more as they were “so good!”  So we made some this afternoon and I thought I would share the recipe here as well.

Apple Jack Cookies

Apple Jack Cookies

Ingredients:

1 C. brown sugar
1/2 C. shortening
1 egg
1 1/2 C. flour
1/2 t. baking soda
1/2 t. salt
1 t. nutmeg
1 C. chopped unpeeled apple

Directions:
Cream togeher sugar and shortening.   Beat in egg.  Sift together dry ingredients and add to mixture.  Beat until well blended.  Stir in apples.  Drop in the shape of ball on a greased cookie sheet.  Bake at 375 degrees for 12-15 minutes.

    Believe it or not I still have apples left in the fride from fall picking. This would be a great recipe to use them up, I am sick of applesauce. Thanks
