Bacon, Avocado, Cheddar, & Tomato Sandwich

One of my very favorite things about late summer is the abundance of delicious tomatoes available at the local farmer’s market. I incorporate them into our daily meals as often as possible. This week has been particularly hot outside, and I didn’t want to turn on the oven to bake for an extended period of time. My husband has been craving avocados, and everyone at our house loves bacon, so I decided to make a fun twist on the traditional BLT. I recommend white cheddar for this sandwich, but freel free to substitute your favorite kind of cheese if you prefer something else.

Bacon, Avocado, Cheddar, & Tomato Sandwich

  • 2  Slices of your favorite bread
  • 4 pieces center cut bacon
  • 1/2 small or medium tomato
  • 1/2 avocado, mashed
  • 1 slice white cheddar
  • salt and pepper, to taste

Cook bacon, and drain on paper towels. Set aside. Slice tomato and mash avocado. Turn broiler onto low. Place 2 slices of bread on a cookie sheet and broil until golden brown. Flip bread and brown the other side. Place a slice of cheddar on one slice of bread and broil until cheese has melted.

To assemble sandwich, arrange bacon on the slice of bread that has the cheese. Spread avocado on the other slice of bread. Place tomatoes on top of bacon, and top with the avocado bread.
