Baked Oatmeal
I made this dish recently when I realized we were almost out of milk one morning. It was a wonderfully warm and filling dish on our cold winter day. My children loved the taste and cleaned the dish so quickly, next time I’ll double the recipe. Serve with fresh fruit and you have a great meal to start your children’s day off!
Baked Oatmeal
- 1/2 cup applesauce
- 1/2 cup brown sugar {or honey}
- 1 egg
- 3 cups rolled or quick oatmeal, uncooked
- 2 tsp. baking powder
- 1 cup milk
- 1/2 tsp cinnamon, optional
- 1 cup chopped nuts, raisins, apples, or other fruit {optional}
Combine applesauce, brown sugar, and egg in a large mixing bowl. Add dry oatmeal, baking powder and milk. Mix well. Add nuts and/or fruit if using. Mix well.
Pour into a greased 8″ square baking dish. Bake at 350 for 30 minutes. Serve hot, cold, or at room temperature with milk.
