Biscuit and Gravy Casserole

My family loves biscuits and gravy. It’s such a homey, comforting breakfast (or dinner), and so quick and easy to prepare. When I saw a different versions of biscuit and gravy casserole making the Pinterest rounds, I knew I had to come up with something that my family would love. This was a HUGE hit – there were no leftovers. It’s definitely a “splurge” type recipe in terms of calories AND store-bought ingredients, so it’s not something I would make every week (or even every month). But for an occasional quick and easy meal, this one’s definitely a winner!

Biscuit and Gravy Casserole

  • 1 lb breakfast sausage 
  • 2 packets country style gravy mix (each mix makes 2 cups of gravy), plus the required ingredients to make the gravy (usually just water)
  • 1 dozen large eggs
  • 1/4 half and half or milk
  • 1 TBS butter
  • 2 cans store bought buttermilk biscuits

Preheat oven to 350. Prepare a 9X13 pan by spraying with cooking spray.

Brown sausage in a skillet until fully cooked – set aside.

Combine eggs and half and half. Melt butter in a skillet over low heat and add eggs. Cook to a soft scramble.

Prepare the gravy. Once prepared, add the sausage.

To assemble the casserole, pour half of the sausage gravy mixture into the 9X13 pan. Top with the scrambled eggs. Top the eggs with the remaining gravy. Arrange the biscuits on top of the casserole. Bake for 20-25 minutes until the biscuits are cooked through and golden brown on top.

    Oh my gosh.. you weren’t joking this sounds sooooo good!!! I bet I could do it with bisquick type drop biscuts.
