Buffalo Chicken

Need a quick meal for tonight?  This one comes together in less than 30 minutes.   By flattening the chicken before you cook it you get a quicker cook time and a tender juicy chicken to serve your friends.  You also can get some frustration out on the chicken from your day… OK maybe that is just me.

I served this with a sweet potato {microwaved}, but another great side dish would be Cheesy BBQ Potatoes if you had some extra time.  Add some corn and a side salad and you  have a great quick meal!

Buffalo Chicken

  • 4 boneless skinless chicken breast halves 1 tablespoon oil of choice
  • 1/2 cup barbecue sauce
  • 1 teaspoon red hot pepper sauce
  • 2 teaspoons shredded mozzarella cheese

Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper.

Heat 1 tablespoon oil in 12-inch nonstick skillet over medium heat. Add chicken and brown on each side.

Mix together 1/2 cup barbecue sauce and 1 teaspoon red pepper sauce. Pour over chicken, turning to coat. Cook about 15 minutes, turning once, or until chicken is no longer pink in center. A few minutes before removing from heat, sprinkle each chicken breast with about 2 teaspoons shredded mozzarella cheese; cover skillet to melt cheese.

Note:  I did not use the hot sauce as some in my family do not like it hot – also, I forgot to add the cheese…
