Cauliflower Alfredo Sauce
Serves: 6-8
Alfredo sauce is a traditionally a rich, creamy sauce that’s filled with lots of cream, butter and cheese. This healthier alternative is loaded with taste and nutrition. After all it’s made with cauliflower. Children will love topping this low-fat sauce into their favorite fun-shaped pasta. This is an appetizing way to get children to eat what’s normally considered a plain vegetable.
Ingredients:
½ head of cauliflower
½ onion, diced
1 clove garlic, chopped
1 tbsp olive oil
1 cup chicken stock
1 cup 1% milk
1tbsp flour
3 tbsp parmesan cheese
Salt and Pepper to taste
Sauté onion, garlic in a saucepan for 5 minutes or until tender. Add cauliflower and sauté for 1-2 minutes. Add chicken stock and simmer until cauliflower is tender and most of stock has evaporated.
In a bowl, combine milk with flour and then add to saucepan, stirring until thick. Remove from heat and puree in a blender. Add cheese and salt and pepper to taste.
Toss with your favorite pasta.
