Cheeseburger Soup

This Delicious Recipe Was Sent In By Judy Gray.

Cheeseburger Soup
1/2 lb. ground beef
3/4 c onion, chopped
3/4 c shredded carrots
3/4 c celery, diced
1 tsp dried basil
32 oz. bag frozen hash browns
8 oz processed American cheese, cubed (2 c.)
1-1/2 c milk
3/4 tsp salt
1/4-1/2 tsp pepper

1.  Brown beef in a 3-qt saucepan, drain and set aside.

2.  In the same saucepan, saute onions, carrots, celery, basil, and parsley in 1 Tbs buter until vegs are tender, about 10minutes.

3.  Add broth, potatoes, and beef; bring to boil. Reduceheat, cover and simmer 10-12 minutes.

4.  Meanwhile, in a small skillet, melt remaining butter. Add flour, cooking and stirring 3-5 minutes or until bubbly. Add to soup, bring to a boil.

5.  Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper.  Cook and stir until cheese melts.

(This recipe freezes well, is easily doubled and put half in the freezer for another night.)

  1. Hi Christine! Could you update this recipe for me? I started making it tonight, and am having to wing it a little because the directions aren’t complete. For instance…how much butter total? Parsley? Broth?

    Looking forward to tasting “our” creation tonight, but I’d feel much better eating “your” recipes instead!! lol!

  3. Well, let’s see…I didn’t put in parsley…I added 2 cans of beef broth and 2 cans of water. I was feeling rushed, so I just added a shake of cornstarch (not flour) right to the pot. Yes. I know better. You know what happened…the cornstarch didn’t mix in well. But it wasn’t too bad…I didn’t put that much in. Anywho, it tasted good. Reminded me of hamburger gravy - only in soup form. It was nice meal for the cooler weather. I just added two loaves of Pillsbury French bread (my currrent favorite bread!)
