Chicken Grape Salad

Grapes were on sale at the grocery store this week, so I decided to make one of our family’s favorite springtime recipes – Chicken Grape Salad . I love how the sweet juicy grapes and the savory ingredients contrast with one another. Serve this salad on your favorite rolls or in pita bread, and make it a complete meal by adding fresh veggies (we like carrots and celery with hummus or ranch dressing) and a seasonal fruit salad.

This recipe makes a lot, which is great, because it tastes even better the second day when the flavors have had a chance to meld together. If you have little ones at home, you’ll want to cut the grapes into smaller pieces to reduce the risk of choking.

Chicken and Grape Salad

6 chicken breasts (or 1 whole cut up chicken)

1 large onion

celery greens

1 C sour cream

1 C mayonnaise

1 tsp salt

1/4 tsp curry powder

2 C celery, diced

2 C grapes, cut in half

1/4 lb silvered almonds (opt)

4 hard boiled eggs, sliced

Bake chicken, with onion slices and celery greens laid on top, for 1 hour at 350. Cool and then cube chicken (discard the onion and celery greens).

Combine the sour cream, mayo, salt, and curry powder. Add the chicken, celery, grapes, and almonds. Gently stir in the eggs. Keep refrigerated.

  1. yum! I cannot wait to try this recipe. I actually had never had grapes in my chicken salad prior to eating at Arby’s and then at Subway. For whatever reason Subway discontinued this sandwich, and I was so upset!

    We’re definitely going to be doing this one soon. I love that you’re posting recipes on your blog. Between the blog posts and the Dine Without Whine, we’re all set! =)

  2. Those are bone-in chicken breasts, right? I’d hate for someone new to cooking to put boneless skinless chicken breasts in the oven for an hour :)

    I love chicken salad with grapes and walnuts. Yummy!

      You could use either, I often use boneless skinless, and often buy the big ones that do take an hour, or even pop smaller ones in frozen for an hour. But yes, smaller defrosted ones would take less than an hour.
