Chicken Noodle Soup
I consider myself a pretty good in the kitchen. I enjoy making things for my family and friends. Some things I make though are just so delicious and this recipe is one of them. Full of flavor, is simple to put together and, a real bonus, I generally have everything on hand to make it for those days when I’m scratching my head wondering what I’m make for dinner. This soup recipe is one I make when someone is sick in the family too – nothing makes you feel better than a warm bowl of homemade Chicken Noodle Soup! One more added bonus – it’s low in calorie!
Chicken Noodle Soup
- 3 skinless chicken drumsticks
- 7 cups water
- 1 tsp olive oil
- 1 cup diced onion
- 1 tsp minced garlic {I use fresh}
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 1/2 tsp salt substitute
- 1/2 tsp sugar
- 1/4 tsp pepper
- 1 cup uncooked macaroni
Place chicken and water in large pan. Bring to boil then simmer for 1 hour. Remove chicken from bone and dice. Heat oil in skillet. Cook onions and garlic until soft, about 7 minutes. Add diced chicken and cook 2 more minutes. Return chicken and onions to broth and add remaining ingredients and bring to a boil. Reduce heat and simmer until vegetables are tender and macaroni is cooked, approximately 10 minutes. Makes 4 servings.
