Chicken Salad with Raisin Bread

I have made chicken salad plenty of times, but this recipe  is at the top of my families list now.  So delicious and simple.  A great lunch to have on hand or a quick dinner when the evening is full.  The best part really is to serve it on raisin bread.  I think that really took the flavor over board!  Next time I might add grapes too it with less apple just to give it a different twist.

Too make this simpler, I used a roisterer chicken from the grocery store.  Already cooked and super moist!  Hope you family enjoys as much as ours did.

Chicken Salad with Raisin Bread

  • 2 (12-ounce) cans chicken, drained, or 2 cup shredded cooked chicken
  • 1-2 chopped unpeeled Granny Smith apples
  • 1 cup chopped celery
  • 1/2 cup chopped walnuts {we omitted this}
  • 1/2 cup mayonnaise
  • 2 Tbsp. plain yogurt
  • 2 Tbsp. honey mustard
  • 1 tsp. lemon juice
  • 1/8 tsp. salt
  • 8 slices raisin bread
  • leaf lettuce

Combine all ingredients except bread and lettuce in a medium bowl and mix well. Make sandwiches with bread and lettuce. You can store the chicken salad recipe filling in the refrigerator up to two days, tightly covered. {Made 8 sandwiches for my family}
