Coconut Key Lime Popsicles

I recently picked up these cute little ice pop molds at Ikea, and my kids have been begging me to make pops ever since.

It’s been so hot outside, I wanted to make something cool and refreshing. I decided to try coconut and lime, and I’m so glad I did! They were the perfect treat for a hot summer afternoon.

This recipe calls for simple syrup. It’s super easy to make. Simply combine 1/2 C sugar and 1/2 C water in a small saucepan, heat until boiling and all the sugar has dissolved stirring constantly. Allow to cool before using.

Coconut Key Lime Popsicles

- Zest of 4 key limes
- Juice of 8 key limes
- 1/4 – 1/2 C simple syrup (to taste)
- 1 can full fat coconut milk
- 1 C milk
- 1/2 tsp vanilla

Add all ingredients to a food processor and pulse until well combined. Pour into ice pop molds. Allow to freeze for at least 8 hours before serving.
