Corn Dog Muffin Recipe

I’m always on the look out for another choice for lunch besides peanut butter and jelly.  Not that I don’t love the ease of this lunch – but it becomes so monotonous day after day!  My children are not too picky and we had a surplus of hot dogs from an event we hosted.  When I came across this Corn Dog Muffin Recipe I thought it would kill two birds with one stone!

The reviews were wonderful.  Each of my children loved them and it was nice to give them a warm lunch that was quick {and inexpensive} to make.  With the muffins I served grapes and yogurt and all had full tummies when they were done.  It made 12 nice size muffins, so I even had some leftover that I can reheat for another lunch!

Don’t forget that if you have small children cut the hot dog lengthwise and then cut it into pieces. This will minimize the chance of them chocking on a hot dog piece!

Corn Dog Muffins

  • 2 packages boxed corn bread muffin mix
  • 2 Tablespoons brown sugar
  • 2 eggs
  • 1 cup milk
  • 1 can kernel corn, drained
  • 3-4 hot dogs, cut into small pieces

Preheat oven to 400 degrees.   In bowl, combine cornbread mix and brown sugar.  Combine eggs and milk and blend with cornbread mixture.   Stir in corn and hot dogs.

Fill greased muffin cups 3/4 full and bake for 15-20 minutes or until golden brown.

    Ohh, we love Corn Dog Muffins!!! I have a home daycare and I make them in my Pampered Chef MiniMuffin pan. Perfect size for the kiddos & for my teenage boys, I make them full size. I also add some shredded cheese. Another variation is to use leftover sloppy joes or some canned chili with no beans. Mix the chopped hot dogs into the sloppy joes or chili. Poor some cornbread batter in bottom of cups, top with spoonful of hot dog mix, sprinkle with a little cheese and top with more batter. And bake. Yummy Cheesey Chili CornDog muffins :)

  3. Thanks for this. My kids would definitely love this recipe. I like the fact that the recipe calls for kernel corn. The kids have no choice but to eat their vegetables!

    My kids love this made with pork sausages. My favorite is the maple flavored sausages. I precook them in the microwave first, cool them and then cut them up and put into the batter. Makes a great breakfast treat!
