Prep Time: 15 minutes
Ingredients:
3 oz. pkg. instant vanilla pudding mix

			<content:encoded><![CDATA[<p>I don&#8217;t know about you but during the summer I often find that I would rather snack on something light than eating a big meal. Not to mention, who really wants to be cooking during the summer? Here&#8217;s a dip to be served with fresh fruits.</p>
<p>Prep Time: 15 minutes</p>
<p><strong>Ingredients:</strong></p>
<p>3 oz. pkg. instant vanilla pudding mix<br />
1-1/2 cups whole milk<br />
6 oz. can frozen orange juice concentrate, thawed<br />
1/3 cup sour cream<br />
1/4 tsp. ground ginger<br />
1 tablespoon finely chopped candied ginger<br />
1/2 cup heavy whipping cream<br />
2 tablespoons powdered sugar</p>
<p><strong>Preparation:</strong></p>
<p>Combine pudding mix, milk and orange juice concentrate in a small bowl and mix well with wire whisk or eggbeater for 1 minute. Stir in sour cream and both kinds of ginger.</p>
<p>In another small bowl, combine cream with powdered sugar; beat until stiff peaks form. Fold into ginger mixture. Pour into serving bowl.</p>
<p>Cover and chill several hours before serving. Serve with fresh fruit for dipping. I especially like mandarin orange segments, pear slices, strawberries, grapes, and kiwi fruit. Pirouette or sugar cookies are also good dippers.</p>

<p>1. For each mouse, slice a small section from the side of a strawberry so it sits flat.</p>
<p>2. Press a mini chocolate chip into the tip for a nose, using a small dab of icing to secure it in place, if needed.</p>
<p>3. Add icing eyes and stick 2 almond slivers into the top of the berry for ears.</p>
<p>4. For a tail, use a toothpick to carve a small hole in the back of the berry and push the end of a piece of licorice lace into the hole. Serve these berry cute treats with small triangles of cheese.</p>

			<content:encoded><![CDATA[<p>Now that summer has arrived, it seems that our <a href="http://www.kidapprovedmeals.com">Kid Approved Meals E-book</a> is flying out the door.  If  you happen to have kids home during the lunch hour, it might be worth taking a look at.  For $14.95 you can save yourself some sanity in the kitchen.  Here are a couple recipes out of the book:</p>
<p><strong>Granola Bars Recipe<br />
</strong> <br />
4 cups quick cook oatmeal, unprepared<br />
¾ cup chocolate chips<br />
¾ cup grated coconut<br />
¾ cup chopped nuts/dried fruit<br />
¾ cup honey<br />
¾ cup peanut butter<br />
milk as needed</p>
<p>Mix all ingredients together in a large bowl, adding small amounts of milk until the dough begins to stick together. Press mix into well greased large baking pan that has a ½ inch lip on the edge. Bake at 325◦ F for 40-45 minutes or until the edges just start to brown. Cut into desired size bars while still hot but do not remove from pan until completely cool.<br />
 <br />
Chocolate chips, coconut and chopped nuts/dried fruit may be taken out and replaced with other ingredients of your choice. Also, if there is a peanut allergy, the peanut butter may be omitted and the honey doubled.</p>
<p><strong>Super Simple Chicken Fingers (or nuggets)<br />
</strong>  <br />
1 skinless, boneless chicken breast per serving<br />
1 egg, beaten<br />
flour<br />
crushed cornflakes, bread crumbs, chips (whatever you have on hand)<br />
 <br />
Cut chicken into strips or cubes. Roll in flour to coat. Dip in egg and then roll in crumbs. Spread evenly on baking sheet and bake at 450° F until juices run clear. These can also be fried in oil if you prefer but baking is much healthier. (Cooking time will vary depending on how thick your cubes or strips are)</p>

			<content:encoded><![CDATA[<p>I just came across <a target="_blank" href="http://today.msnbc.msn.com/id/21246628/?GT1=10450">this news story</a>.  It is from last year, so maybe some of you have already read it.  Essentially it is about a little boy who can only eat chicken, tuna, carrots, potatoes, grapes and apples.  I can not even imagine!  Thankfully none of our children have allergies but I know allergies seem to be becoming more and more prevelent among children.  Do your children have food allergies?  If so, please leave me a comment about what types of foods are restricted.  Perhaps someday we will have a new product geared towards your needs!</p>
