Freezer Pantry Challenge – Day 1

Alright, so Day 1 of my Freezer Pantry Challenge was New Year’s Day.
Breakfast: Pillsbury Toaster Strudels & Breakfast Hot Pockets (depending on the kid – both straight out of the freezer) Annika had yogurt, Cheerios and a pear.
Lunch: Macaroni & Cheese (boxed) and sliced apples
Dinner – We happened to have company coming over for dinner… so here’s what we had
Ham – someone gave us a HUGE 20lb. ham for Christmas, so we cooked that up – it was DELICIOUS! Probably the best ham we have ever had – truly it was that good! now we have lots and lots of leftovers! Anyone have any favorite ham recipes?
Garlic Mashed Potatoes (boxed) Also given to us
Scalloped Potatoes (also boxed)
I rarely make boxed potatoes – especially when company is coming over… but we didn’t have any regular potatoes and since I was starting this challenge and had them in the house….
Canned Green Beans
Beef House Rolls (this is a local – well semi-local – hour away - restaurant that has the best rolls ever – we bought these from a fundraiser from one of the neighbors, and they were in the freezer)
Orange Slices
Sparkling Cider, Egg Nog, & Rootbeer (all sitting around from our holiday grocery trip – before Christmas)

So not bad for day 1 – of course like I said it isn’t going to be too hard for awhile here.. we are stocked! My ultimate goal is also to get some of this junk I bought on sale OUT of the house.. so we can start eating healthier.
