Freezer Pantry Challenge – Day 10

Breakfast:
  Belgium Waffles – Good bye 1/2 a box of waffle mix that has been sitting in my cupboard forever!  Annika also had a banana – she was soooo excited to see them on the banana tree this morning.  That was the first thing she did when we got in the kitchen, was make the motion with her hand for want and pointed to the bananas.  Too cute! 


Lunch: 
Well, I’m not totally positive what the kids ate… They had a babysitter.  I believe they had leftover pizza & cheese and crackers from what I got from the conversation when I asked when I got home.  Matt and I had a nice business meeting lunch out (paid for by others).  It was definitely YUMMY!

Dinner: Matt and I didn’t eat – we were STUFFED!  The kids had chicken quesadillas – good-bye tortillas, shredded cheese and leftover chicken!  They probably had something else.. not sure – my husband fed them while I worked on some business things. 

We also hosted Bible Study at our house tonight – which means dessert.  I pulled out a frozen Peppridge Farms Cake & Frozen Little Cheesecake Bites I had in the freezer.  I generally like to make something homemade, but since we were busy all day, this worked out great and I got to say good-bye to two other boxes in my freezer that I had in there for instances just like this.

    Thanks for the inspiration to eat the food we already have in the house. I’m also a Flylady.net follower and last week we were in the kitchen zone, so I had gone through all the bottles in the fridge door and threw out the expired ones. Eww! Plus, I found some random 1/2 bottles of things like coleslaw dressing, stir fry sauce and pomegranate marinade, so I started making my menus for the week with recipes that will use up those things instead of letting them take up space or worse, expire. This weekend, I made a beef vegetable soup with random 1/2 bags of frozen vegetables along with half of the seasoned hamburger I had already fried up for taco salad earlier last week. Today we had stir fry for lunch and have a pork loin with the marinade in the crock pot. My husband is loving my excitement when I tell him how I’m using the food that I already have instead of running out to buy more to fit a specific recipe or being tempted to eat out. Since I have started this challenge, my gorcery bill has been $15.04. Thanks!

  2. This is an excellent challenge! I absolutely love it! You know what I have in my freezer? Tons (maybe an exaggeration, but not by much) of turkey! Turkey broth, cut up turkey, and two turkey carcasses ready to boil up for broth. It seems the holidays were very generous to us! :D

    Now, even though my freezer doesn’t look anything like yours, I can see where getting into the back and starting to dig out will produce many wonderful, frugal meals. I love a good challenge and this freezer and pantry cooking challenge is perfect. Thanks again for the idea!

    I am doing so well with this and am excited just how far I can go. I did have to get some milk but I did not pay for it as I had a $4.00 register coupon for $ amount off of anything so I had to pick up scripts and used that. I do know I will have to buy diapers tomorrow. Now to hunt for my Huggies coupons.
