Freezer Pantry Challenge – Day 11

Today was a fun one.. I was taking a meal to a friend who just had a baby.  I rarely make a nice meal, to take to someone, without a quick trip to the grocery store, but today I did it – no trip to the store! 

I took:
Meatballs (I should have taken a picture!  I thought I had one with the recipe on the other blog, but I guess not… at any rate, they are yummy!)
Rice
Green Beans
Rhodes Rolls (cooked)
Lemon Bars

Breakfast: Yogurt, bananas, breakfast sandwiches and Eggo’s. 

Lunch: Grilled Cheese Sandwiches, Tomato Soup, & Celery with PB on it.

Dinner:  The afore mentioned meatballs – I made some for us too, rice, salad (leftover from our pizza restaurant visit the other night), and Jello 1-2-3 – which turned out to be Jello 1-2  (Still Yummy)! I should have taken a picture of this too!  Maybe I’ll make it again soon!  I probably will, since I now have a 1/2 used tub of Cool Whip in my fridge.

Jello 1-2-3
3/4 boiling water
1 pkg. Sugar-Free Gelatin
Ice Cubes
1/2 c. cold water
1/2 cup thawed Cool Whip Lite

Add Boiling water to gelatin mix – stir 2 minutes – or until completely dissolved.  Pour into blender.  Add enough ice to the 1/2 c. cold water to measure 1 1/4 c.  Add to blender.  Blend 30 seconds.  Add Cool Whip – Blend until smooth.  Pour into 4 dessert dishes.  Refrigerate until firm.  (it should make 3 layers – ours made two…at any rate, it was still delicious!)

* I don’t list drinks most of the time, because most of the time we just drink water.  We do have some Apple Cider, Apple Juice, Kool-Aid & Milk in the fridge at the moment, so those get used periodically.  We don’t really drink milk much at all – the baby has a cup before bed each night, but other than that, it is mostly just used for cooking.  The boys really like chocolate milk (that’s the only way I can get them to drink milk), but I haven’t bought that for them yet this month.  I probably will eventually. 

The kids also have snacks during the day that I just don’t keep too much track of..  They did have Lemon Bars (I had made an extra pan) today because they had friends over (my poor husband watched SEVEN kids for me while I went to deliver the meal I was taking to my friend.)  At any rate, snacks have been things in the house – I haven’t bought any extra snacks.  Eventually they will run out of “convenience snacks” and we’ll have to get a bit more creative.  They are good at snacking on carrots sticks, apples, celery, orange, bananas, & grapes too!

    Jello and Coolwhip, I have this recipe too and had forgotten about it! I can see this in our future! I used up several boxes of jello recently, we seem to have an abundance, making applesauce flavored. The kids like it better than the little cups they sell in the store and I just use it to replace the sugar in the homemade applesauce. Healthier as it’s sugar free. Anyway today I did go to the grocery store but only purchased lettuce (2.88) and carrots BOGO at 1.49. So that brings this month’s purchases to 5.88. Getting a kick out of this! Had to replan the menu for the week to fit in the leftovers. Still feeling motivated and going strong!

    I checked out your mom’s purses.They are really nice! I expecially liked the sort of batik fabric.
    The jello is something my mom used to make us in the summer. I had forgotten all about it. My kids will love it. I was just wondering about the snack thing. My 12 ds is a snack monster. I am sure he is growing again!!
    I am trying the challange also although no blog. We had a puppy emergancy yesterday to the tune of $300 vet bill. She survived and my DD is so relieved. makes our pantry challange even more important.
