Freezer Pantry Challenge – Day 17

Breakfast: Chocolate Chip Pancakes
1 c. all purpose flour
1/2 c. whole wheat flour
1/3 c. sugar
2 t. baking powder
1/8 t. salt
1 1/2 c. milk
2 T. Canola Oil (or oil of choice)
2 egg whites
1/2 bag mini chocolate chips
Combine first five ingredients. Add milk and oil and mix just until moistened. Beat egg whites in a small bowl until stiff peaks form. Fold into batter. Fold in chocolate chips. Pour batter (approx. 1/4 c.) onto griddle. Cook until bubbles form and the batter begins to look dry on the edges. Flip. When browned, serve warm with garnish of choice. We used butter and powdered sugar.

Lunch: Ham & Apple slices for the kids. Matt had leftover pancakes (he didn’t eat breakfast). I had a roast beef sandwich.
Dinner: Leftover roast beef, noodles with 4 cheese sauce and oranges. (this was a sauce packet I had sitting around – found like in the gravy packet aisle in the grocery store)
The ham and roast beef is completely gone and our refrigerator looks BARE. The freezer has a tiny empty space too!
Tomorrow we don’t have school, and my husband leaves to go out of town for the week. Generally when he is out of town, I don’t cook much – it is usually convenience food… so we’ll probably use up some frozen pizza’s and hamburger helper – a couple of the kids favorites! BUT… I do plan to do some baking/cooking tomorrow to help on the breakfast front. We are pretty much out of breakfast convenience food and being that Matt is going to be out of town, that means that my mornings will be extra hectic as I get all 4 kids bundled up and out the door to take 1-2 kids to school (depending on the day). Matt works from home too, so generally I only have to take the school attendees with me and the other two/three can stay home in their jammies or in bed (depending on the day). So at any rate, I want to have breakfast thoroughly planned out and hopefully mostly cooked before Tuesday morning.

I just stubled across this today. I think this is a great idea for anyone to try. It saves money by using up what is left over in the freezer or by using things you may have forgotten about. I am planning to move shortly so we have been using up things in the pantry an dthe freezer. We won’t be bale to take the cold foods with us so we are really trying to get the freezer emptied. It has been interesting but I have learned a little bit about some habits I didn’t realise that I had. I will try to do better with my food purchases in the future. Thanks
