Freezer Pantry Challenge – Day 23

Breakfast:  Who knows…  I fed Annika some cereal and a granola bar.  The boys are generally on their own on Saturdays.  I think 1 had cereal and the other two didn’t eat. 

Lunch:  Matt and I had leftovers from our restaurant food last night.  The boys had Hot Pockets (the last ones – they were sad…)  Annika shared Matt’s food.

Dinner:  Pork Ribs, Corn (from the freezer) & Bread. 

Speaking of Bread… You’ll have to read over here about my bread making excitement tonight and learn from my mistakes.  I do know better…

I also made another batch of those blueberry muffins today – the boys were begging for more.. they love them!  I like that they make 24 muffins instead of 12 – that makes them last more than a day – which is nice! 

We’re off to bed – we might catch up on some DVR’d shows, or we might just crash and sleep.

    Christine,
    First let me say that I am glad you okay! I saw the picture before I finished reading and knew what happened. Hmm won’t say why I recognized it…lol! Anyway I saw that you were out of hot pockets :( I make my own and it’s really simple. Not sure if something you are interested in but let me know if you are. Don’t want to take up a bunch of space with the recipe if not! Anyway glad you survived the explosion of glass and live and learn!

    I’d like the hot pocket recipe.
    We fudged a little and bought a Wal Mart pizza. Had salad with it. Company after church all afternoon and I had made homemade potato soup before Sunday School. We had it and homemade rolls and corn bread for lunch. Tomorrow I will make out a menu for this week. I love telling people about cleaning out the freezer. They are shocked to know that after 3 weeks, we haven’t had the same meal twice:)

    I hope Christine doesn’t mind that I post this! I will keep it short and sweet. For homemade hot pockets, I use the ABM pizza dough recipe from hillbillyhousewife.com. You can also use any frozen bread dough or pizza dough you have. You seperate the dough into small balls and roll out (i just use my hands) into pocket size pieces. (i make bigger for hubby and smaller for kids and I) You then put the filling you are going to use directly in the center leaving about an inch around the top/bottom and ample space to roll up on the sides. I have made pizza, turkey/brocolli/cheese, and ham/cheese. If using sauce don’t use too much as will leak and make soggy. Roll up, I put sides up first then bottoms. Bake 350 for about 15 minutes or until lightly browned. I have only frozen from baked form. Freeze well! Can pull out and pop in microwave frozen for 2 -21/2 minutes will depend on size and wattage. I have used whole wheat dough also. Enjoy!
