Freezer Pantry Challenge – Day 24

Sorry I didn’t post yesterday – I was taking a break from the computer for the day – a nice break once in awhile! 

Breakfast:  Blueberry Muffins

Lunch:  Chili, Refried Beans & cheese mixed together into a dip for tortillas cihps. 

Dinner:  Leftover Pork ribs, Green Beans & Stove Top

Are you really missing something now that the end of the month is drawing nearer?  My kids are really missing tortillas, and I think soon I am just going to be missing plain convenience foods that I can pop into the oven or microwave real quick.  Although, I think that is a good thing to be out of!  I’m not sure how many of those I am actually going to replace.  I just need to work on some homemade replacements that I can have ready to go!

    It seems you all eat a lot of Eggos. I always make huge batches of pancakes and waffles to freeze. I lay them out on cooling racks first so they don’t stick together. It’s super convenient to throw them into the toaster, and even better because they are homemade.

    I agree tortillas are easy to make. I want a tortilla press so they are more perfectly round.

    Finished up the leftover vegetable soup tonight. The rest of the spaghetti will go tomorrow for my husband’s lunch. I still have a few leftovers in the fridge for lunches this week.

    I had left over pepperjack cheese, I had a few tortillas left so I figured I would make cheese enchiladas, it didn’t seem like it would be enough so I used a can of Tyson chicken. I put chicken and cheese on the torts rolles them up topped with enchilada sauce and more cheese and they turned out really yummy! I just used the last of my torts and thats something we ALWAYS have in the house…

    Leftover homemade waffles are perfect for freezing, just let them cool first. When you want them, just pop in the freezer. Dead simple! Over the past six months, I have done away with nearly every convenience food I can think of, and I buy vegetables loose rather than pre-prepared and wrapped in plastic. It’s so much cheaper and healthier. Also, I bought Tawra Kellam’s ‘Dining on a Dime’ and she has TONS of recipes for items that we’ve all grown used to buying at the store rather than making ourselves (I don’t work for Tawra nor am I related! just recommending the book)
    In my experience, if you really want to change the way your family eats, you can, as long as you believe that what you are doing is the right thing. Keep up the good work!
