Freezer Pizza Kits

Pizza Kits
In separate bags, place the following:
3 c. shredded mozzarella cheese
1 c. pizza or spaghetti sauce
Toppings of your choice – Pepperoni, sausage (browned), ham and canned pineapple work well.
½ of the BEST pizza dough recipe. (Recipe below)
Place all four bags into a one-gallon freezer bag, and put a slip of paper with the instructions inside. Lay flat to freeze.
PIZZA KIT INSTRUCTIONS:
Remove dough from bag, and place in greased bowl. Allow cheese, sauce and pepperoni to thaw in fridge. Cover dough with towel or plastic wrap. Allow to rise twice in the bowl (This will take most of the day. You can also thaw the dough overnight in the fridge, then set it out to rise the next afternoon.). Punch down. Oil cookie sheet and use fingers to press the dough out to edges. Prick the dough with a fork in various places to keep it from bubbling up. Top with sauce, cheese and toppings. You can allow it to rise a little bit before placing in the oven. Bake at 425° for 20 min.
Makes 1 cookie sheet size pizza.
Garlic Pizza Crust
2 Tbsp. yeast
2 c tepid water (90*)
2 Tbsp. sugar
1/2 c oil
1 tsp. salt
5 1/2 – 6 cups flour
3 cloves crushed garlic
Dissolve yeast in water and add sugar. Wait a few minutes then add oil and salt and garlic. Mix in 3 cups flour and mix about 10 min till it leaves the side of the mixer bowl. Add remaining flour with dough hook or by hand. Knead until smooth. Section and place in freezer bags (if desired).
To BAKE OPTION #1: Remove from freezer and place dough into greased bowl. Cover with towel and allow to thaw and rise for 3 – 6 hours. Allow to rise twice in the bowl. Punch down. Oil baking sheets using fingers press out to edges.
Makes 2 pizzas, cookie sheet size. Let rise a bit and top. Bake at 425* for 20 min.
**Note You can use your bread machine for this recipe. I have also made garlic bread sticks with this recipe. I just add extra garlic powder to the recipe. I bought small pizza pans and sometimes we will have “Personal Pan Pizza Night”. Kids love making their own personal pizzas.
