French Potato Salad
Summer is almost officially here, although with the beautiful weather we’ve been having this spring it seems to have come even earlier! With the nicer weather the grill gets dusted off at my house on the weekends and we get to enjoy the delicious foods with the great flavor of our charcoal grill.
I’m always on the look out for sides to serve with my husband’s grill dishes. I like to look for things that I can make ahead so I feel like I have the “night off” from cooking. This salad was one my Mom gave me. I love the flavor and the color it adds to your plate with the use of French dressing.
French Potato Salad
- 5 cups sliced and cooked potatoes
- 1/2 cup minced celery
- 4 green onions, sliced
- 1/4 cup French dressing
- 1 cup dairy sour cream
- salt, pepper, and cayenne, to taste
Combine potatoes, celery, and onions. Pour French dressing over mixture and let stand in refrigerator for several hours. Just before serving, fold in sour cream. Season with salt, pepper and cayenne to taste.
