Homemade “Kind” Inspired Bars

I have a bit of an obsession with Kind bars. They’re one of my favorite treats – especially when I need an energy-providing snack. But they’re quite pricey, so I decided to attempt a recreation at home. I think this recipe comes pretty close. My favorite bar is the dark chocolate cashew cherry, so that’s what I decided to attempt the first time around. You can use any combination of dried fruit and nuts that you like, just keep the ratios the same.

Homemade “Kind” Inspired Bars

  • 1 1/3 C chopped nuts (almonds, cashews, peanuts, etc)
  • 1/2 C dried fruit
  • 1/3 C puffed rice cereal (such as Rice Krispies)
  • 1/8 tsp sea salt
  • 1/3 C brown rice or barley syrup

Preheat oven to 325 degrees. Line an 8X8 pan with parchment paper and spray parchment paper with cooking spray.

In a large bowl, combine nuts, fruit, and rice cereal. Add salt and brown rice syrup, and stir until well-combined. Press firmly into 8X8 pan. Bake for 20 minutes. Remove from oven. Allow to cool for 20 minutes. Cut into 8-10 bars and store in an airtight container.
