Lazy Lasagna – Freezer Recipe
We tried a new recipe last night. Lasagna – can’t go wrong with that right? I made one and popped it in the oven and the other I put in the freezer for later. I am trying to do some freezer cooking for the summer, but instead of one huge cooking session – I think Iwill just do one recipe at a time – cook one and freeze the rest.
Lazy Lasagna
12 oz. Lasagna Noodles (uncooked)
1/2 t. dried oregano
2 (15 1/2 oz. jars spaghetti sauce
2 C. small curd cottage cheese (or ricotta)
12 oz. shred mozzarella
Add oregano to spaghetti sauce. in two 10x6x2 inch baking dishes, spread one cup of the spaghetti sauce on the bottom of each dish. Then make layers in this order: uncooked noodles, cottage cheese, mozzarella, spaghetti sauce – repeat. Wrap pan in foil; label and freeze. To serve: Thaw completely (1 1/2 days in the refrigerator) Bake tightly covered at 350 degrees for 40 minutes, or until edges are bubbly and center is hot. Take cover off and cook10 minutes longer. Let stand 10 minutes before serving. There’s no need to pre-cook the noodles since they’ll cook in the sauce while the Lasagna bakes. Just make certain that the noodles are completely covered with sauce. Some people recommend adding a small amount of water to the sauce (about 1/2 cup).
*I personally also added 1 pound of ground beef and 1 pound of sausage. I also used no-cook noodles just to be safe. It was a huge success – even my hubby who generally says he likes store bought better than homemade lasagna loved it and my oldest son who claims he doesn’t like lasagna gobbled it up. It’s a keeper!






This is very similar to how I make lasagna. I use the no boil method and it’s so much faster and easier than boiling the lasagna first. I really enjoy your blog, by the way!
