Mandarin Shortbread Salad

This is one of those nostalgic recipes that has been around for ages, but it’s still a favorite at our dessert table, and always popular at potlucks. The creaminess of the pudding and combined with the bright note of the mandarin oranges tastes like summer to me.

Mandarin Shortbread Salad

  • 1 Large (5.1 oz) package instant vanilla pudding mix
  • 2 Cups milk (or buttermilk)
  • 1 11 0z container of Cool Whip, thawed
  • 2 11 oz  cans of mandarin oranges, drained
  • 3/4 package fudge stripe shortbread cookies, broken into small pieces

Combine milk and pudding mix, and whisk for 2 minutes. Allow to sit for 2 minutes. Fold in Cool Whip. Fold in oranges. Cover and store in the refrigerator until ready to serve. Stir in shortbread cookies right before serving.
