Mock Ice-Cream Sandwiches with COOL WHIP

Summer is here! I absolutely love creating quick easy treats in the summer – preferably without having to turn on the oven on hot summer days. COOL WHIP Whipped Topping lends itself perfectly to quick easy summer desserts.

This is one of our absolute favorites – it’s super quick, fun and delicious! The kids are also able to make these on their own with a little supervision from mom.

Mock Ice-Cream Sandwiches with COOL WHIP

Chocolate Graham Crackers (broken in half)
COOL WHIP (any type you prefer)
Sprinkles of your Choice

Spread COOL WHIP on one half of a chocolate graham cracker. Add the other half of the graham cracker as the top. Add sprinkles around the edges. You may enjoy right away, or pop in the freezer for a couple hours.

I froze this batch, but when I took them out into the hot sun to phootgraph they melted fast! They can be a bit messy, but the kids (and adults) love them, and it is an easy clean-up!
