No Sugar No Flour Pizza

Okay, we’re taking the term “pizza” lightly here!  You can’t be expecting the recipe to REALLY taste like pizza…  But if you put your past delicious pizza experiences aside and have an open mind, this is actually pretty good.   I meant to take a picture, but totally forgot!  Next time! 

Crust:
3 c. cold cooked brown rice
2 eggs
1 c. shredded mozzarella cheese
Cooking Spray

Sauce:
2 cloves garlic, minced
15 ounce can of diced tomatoes with juice
1/2 t. dried basil
1/2 t. dried oregano

Toppings:
1 c. shredded mozzarella cheese
Toppings of choice.  We used turkey pepperoni and red & yellow sweet peppers

Preheat oven to 450 degrees.

In a medium bowl, mix together brown rice, eggs, & 1 C. mozzarella cheese until well combined. 

Coat a 13” pizza pan with cooking spray.

Pat crust mixture firmly into pan.  Bake 20 minutes or until lightly browned.

Meanwhile, combine sauce ingredients.  Bring to a boil, then redue heat and simmer 10 minutes or until thickened.

When crust is ready, spread sauce over baked crust.  Sprinkle cheese over the top and then add the toppings of your choice.  Bake another 10 minutes or until cheese is melted. 

With the toppings we used (51 slices of turkey pepperoni, cheese & peppers) it is 437 calories per 1/4 pizza.

    Sound good! Always looking for something quick, easy and yet health for the kids (Note: Some kids don’t like healthy food, so by hiding the health and still by giving the take away food look – I think it might actually work.)

    Tasted great but it stuck to the pan a little. I will try olive oil on the pan instead of cooking spray next time. Thanks for the great recipe!

    Love the idea behind this recipe, Christine–it’s a great way to go healthier and gluten free. You might also try substituting thinly sliced Yukon Gold potatoes or frozen hashbrowns for the rice–guaranteed to give your crust a smoother texture, plus a shot of vitamin C and potassium!
