Nutty McButternut Squash Soup

Nutty McButternut Squash Soup
Serves: 6-8

Tickle your children’s taste buds with this flavorful pureed soup which combines an intense color and mouthwatering aroma. Ideal for winter; kids will love eating this soup on its own or as part of a meal.

Ingredients:
1-2 tbsp olive oil
1 large onion, diced
 2 garlic cloves, sliced
 1 large carrot, diced
 1 stalk celery, diced
 ½  tsp cinnamon
 1 butternut squash, about 4 lb, peeled, seeded and diced
 4 sprigs fresh thyme (optional)
 4 cups low sodium chicken stock
 1 cup 1% milk
Salt and pepper to taste
 
Heat the oil in a large pot and sauté onion, carrot, celery and garlic until soft and the onion is translucent, for about 5 minutes.  Add the squash, thyme and cinnamon and sauté for about 2 minutes.

Add the chicken stock and simmer until the squash is soft for about 30 minutes.  Remove from heat.  Puree the mixture, in small batches, in a blender on medium speed until smooth and well-blended.  Place the pureed mixture into another pot and stir in the milk to achieve the desired consistency.
Add the salt and black pepper to taste.
