Parmesan Garlic Chicken

Some friends and I got together recently and made freezer meals.  It is fun to get together as a group to do this.  Have you done this with friends?

We keep it pretty simple.  One friend hosts it in their home.  She chooses the meals, gives us an order sheet, and shoppes for the food.  Then she preps anything that needs to be done before hand {like cooking rice} sometimes with the help of a friend.  Each meal is set in one spot with everything you need to put it together.  We show up, chat while we put our pre-ordered {and paid for} meals together, help with clean up, and leave with some great meals to serve our family for the month.

This was a new recipe my friend gave us and it was excellent.  I was surprised how crunchy the coating became on the chicken and the flavor was amazing.  I served it with broccoli and rice, but you could serve it over noodles or with potatoes.

Parmesan Garlic Chicken

  • 6 boneless chicken breasts
  • 1 cup Parmesan cheese
  • 1 envelope Italian dressing mix
  • 2 garlic cloves, minced*
  • 1/2 cup olive oil
Flatten chicken breast so that they will cook evenly later.

Mix together cheese, garlic, and Italian dressing mix. Dip chicken in olive oil, then coat with cheese mixture. Wrap each chicken breast individually in plastic wrap, then place in freezer bag. Freeze up to 3 mos.

*We used garlic powder, but didn’t measure it…

To serve, thaw completely and place in a greased baking dish. Bake at 400 degrees for 45-60 min. until no longer pink.

    This looks delicious and I can’t wait to make it, but what kind and how much garlic do you use. The recipe doesn’t say. It just says to mix it with the cheese and dressing mix. Thank you! :)
