Sloppy Joe “Cupcakes”

This is one of those quick, easy recipes that’s great for a hot lunch or a simple dinner. My children gobble this one up and ask for seconds!  We also like to switch things up and use shredded chicken with barbecue sauce when we’re not in the mood for hamburger. Either way, you can’t lose!

Sloppy Joe “Cupcakes”

  • 1 lb ground beef or turkey
  • 1 Can sloppy joe sauce
  • 1 tube of “Grands” biscuits
  • French fried onions
  • Shredded cheddar cheese

Preheat oven to 350 degrees. Spray a muffin tin with cooking spray.

Brown hamburger and add sloppy joe sauce.

While hamburger is browning, open the tube of biscuits, and cut each biscuit in half. Place one muffin half in each section of muffin tin. Bake until lightly golden. Remove from oven. Top each biscuit with a spoonful of sloppy joe mixture, a few French fried onions, and shredded cheddar cheese. Place under broiler until cheese is bubbly. Serve immediately.

    Thanks for this post and the dinner idea! I used my own sauce due to allergies, but other than that, these were perfect and simple! The family LOVED them! Not a single one of the 16 were left! :) Thanks again!
