Slow Cooker Chili Verde

As I’ve mentioned before, I’m a huge fan of one pot meals. And if that one pot meal happens to contain slow cooked pork, I’m a happy girl! This recipe for chili verde is so yummy – it’s fabulous served with tortillas, or equally good in a bowl topped with sour cream, cheese, and tortilla chips.

Slow Cooker Chili Verde

  • 2 lbs pork, diced
  • 1 large onion, chopped
  • 14 oz low sodium chicken broth
  • 1 1/2 tsp garlic powder
  • 1 TBS corn starch mixed with 2 TBS water
  • 1/2 tsp oregano
  • 1 TBS cumin
  • 1/2 jalapeno, finely diced
  • 1/4 c chopped cilantro
  • 1 TBS chili powder
  • 1 10 oz can green enchilada sauce
  • 2 16 oz bottles salsa verde (I love Herdez brand)
  • 1 7 oz can chopped green chiles
  • 1 can white beans, drained and rinsed

Brown pork in a skillet over medium heat. Add pork to slow cooker, and add onions to the still-hot skillet. Cook onions until translucent. Add to slow cooker along with chicken broth. Cook on low heat for 3 hours or high heat for 1.5 hours. Add remaining ingredients. Cook an additional 2 hours on low heat.
