Spinach Apple Salad
There’s a salad at Wendy’s that I absolutely love, but I feel like it’s a bit of overkill to pay that much money for a single serving salad once a week when I can easily recreate it at home (with enough to serve the entire family). I buy organic baby spinach from Costco, and it lasts us about 4-5 days between salads and omelettes. This salad is so good, I can actually convince my children to eat spinach. If there happen to be any leftovers, I’ll eat it instead of dessert – no joke! You can serve this salad as a side dish, or add some grilled or rotisserie chicken and make a meal out of it.
Generally, I just eyeball the ingredients, but these measurements are similar to what I would include when making a salad as a side dish for 4 people.
Spinach Apple Salad
- 4 Cups baby spinach
- 1-2 apples, diced
- 1/4 C toasted almonds
- 1/3 C craisins
- 1/3 C crumbled bleu cheese
- Raspberry vinaigrette dressing, to taste
Place the spinach in a large bowl. Add the almonds, craisins, apples, bleu cheese, and dressing. Toss to coat. Add sliced grilled chicken to make a quick, healthy lunch or dinner.
