Strawberry Banana French Toast Bake

Mornings can be such a rush of activity as you try to get ready for the day to begin.  Most days at our house we have boring breakfasts that are quick and easy.  Sometimes though I get it together and make this dish the night before and then wake up a little earlier so I can put it in the oven.  Makes a great warm breakfast to send everyone off on their way.

Strawberry Banana French Toast Bake

  • 1 loaf french bread
  • 10 eggs
  • 1/2 cup milk
  • 1/2 cup apple or orange juice
  • 2 ripe bananas, sliced
  • 1-2 cups strawberries, sliced
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
Tear bread and fill the bottom of a greased 9×13 baking dish.  Place strawberries and bananas over bread.  In large bowl whisk eggs, milk, juice, vanilla and cinnamon.  Pour egg mixture over the bread.  Cover and refrigerate at least 2 hours, but overnight is preferred.
To cook, remove cover and bake at 350 for 30 minutes or until eggs become golden on top.  Let cool a few minutes before serving.
