Strawberry Cream Cheese French Toast

Have I mentioned how much I love strawberry season? There are so many yummy recipes you can create with strawberries. This simple French toast is one of my absolute favorites. It’s perfect for a special weekend breakfast, and even better as a weeknight “brinner” – it’s kind of like breakfast, dinner, and dessert all in one!

Strawberry Cream Cheese French Toast

  • 1 loaf thick Italian bread or Texas toast
  • 3 eggs
  • 1/2 C milk
  • 1 tsp vanilla extract
  • 1 TBS brown sugar
  • 1 1/2 Cups fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • Butter, for cooking

In a shallow bowl, whisk together the eggs, milk, vanilla, and brown sugar. Preheat oven on lowest heat setting.

Spread cream cheese on two slices of bread, and arrange strawberries on top of one of the bread slices. Top with the other slice of bread and press down on the edges to seal. Repeat with the rest of the bread and strawberries until the entire loaf of bread has been made into strawberry cream cheese sandwiches.

Melt a small amount of butter on a griddle over medium low heat. Dip the sandwiches in the egg mixture for a few seconds on each side. Place on griddle and cook 2-3 minutes per side until golden brown. Place on a cookie sheet and store covered in the oven until all the sandwiches have been cooked and ready to serve.

Top with powdered sugar or fresh maple syrup.
