Taco Casserole
It’s Tuesday, and at many of my friend’s houses they usually call it “Taco Tuesday”. I thought I’d share a recipe we like to have, although we don’t do a Taco dish every Tuesday… do you?
I got this years ago from a friend in Weight Watchers. I tweaked one ingredient – the mushrooms. Some days I don’t use them at all, but if I do I prefer to use fresh. Just something about canned mushrooms that just look odd to me. But really, when I think of tacos, I do not think of mushrooms. I’ll type it up as she gave it to me, and you can tweak if you like!
Taco Casserole
- 8 low fat biscuits
- 2 Tablespoons onion
- 1/4 of a medium green pepper, chopped
- 1 cup canned mushrooms
- 1 lb ground turkey
- 3/4 cup water
- 3/4 cup tomato sauce
- 1 package taco seasoning
- 4 oz part skim shredded mozzerella
Spray a 9×9 pan with oil. Press biscuit dough into pan to form crust.
Brown turkey, add onion and pepper and cook till soft. Add tomato sauce, water, mushrooms, and seasoning. Mix well. Pour over unbaked crust.
Bake at 400 for 15 minutes.
