<p>Have you ever started dinner only to realize you do not have the cream of.. soup on hand?  Or maybe you try to avoid using it because of all the sodium in those little cans.  Did you know it&#8217;s actually pretty easy to make your own?  While I like the convenience of the can, I would rather make it myself to save my family the sodium and other things in the can.  Most of the time I have all the ingredients on hand.  This recipe is for cream of celery soup, but to make mushroom instead, just replace the celery with mushroom!</p>
<p style="text-align: center">I like to have all the ingredients ready next to my stove so I can throw them in as it&#8217;s time.  Here are my players ready to go&#8230;</p>
<p style="text-align: center"><img class="aligncenter" src="http://i30.photobucket.com/albums/c325/speedymom33/Menu%20Mom/4x6DSC_8330menu.jpg" alt="" width="467" height="311" />All you need to do is melt the butter, saute the onion and celery, add the flour till smooth and then slowly stir in the milk.  Then you just cook and stir till it&#8217;s all thickened.  You&#8217;ll end up with just over a cup of cream of&#8230; soup.</p>

<ul>
<li>3 Tbsp. butter</li>
<li>1 Tbsp. onion</li>
<li>1/4 celery {or mushroom}</li>
<li>3 Tbsp. flour</li>
<li>1 cup milk</li>
</ul>
<p>In small saucepan, melt the butter over low heat then add the onion and celery. Saute until soft then add flour.  Stir till smooth then SLOWLY add milk while stirring.  Continue stirring {do not let little Johnny call you away from the stove till you are done} until the mixture thickens.  Use as you would a can in any recipe!</p>
