White Chocolate Raspberry Almond Pound Cake

It’s holiday time! I absolutely adore the special holiday smells and flavors this time of year! My 7 year old LOVES eggnog – he told me in July “I cant’ wait for Christmas” I said “Why?” He said “Because then we can have eggnog again!”

Recently I was asked to share a recipe for a holiday treat that incorporates International Delight Coffee Creamer. At first, I was a bit nervous – as I really don’t buy coffee creamer – I don’t drink coffee! However, I thought it was worth a try! I am happy to share that this recipe actually turned out quite amazing! I am now very intrigued about creating even more recipes with coffee creamer! I am hooked!

International Delight has great holiday flavors – I chose to purchase White Chocolate Raspberry and Peppermint Mocha. The recipe I am sharing today features the White Chocolate Raspberry.

Without further ado, I present to you…

White Chocolate Raspberry Almond Pound Cake

1 c. Butter
1/2 c. Shortening
3 c. Sugar
5 Eggs
2 t. Almond Extract
1 t. Vanilla Extract
1 t. Salt
1 t. Baking Powder
3 c. Flour
1 c. International Delight White Chocolate Raspberry Creamer*

Preheat oven to 325 degrees. Grease two loaf pans. Cream together butter and shortening. Gradually add sugar and eggs, a bit at a time, and cream until smooth with each addition. Mix in the extracts, salt and baking powder. Mix in the creamer. Mix in the flour – just until combined. Pour the batter evenly into both loaf pans. Bake at 325 degrees for 50 minutes. Reduce temperature to 300 degrees and bake for an additional 20 minutes (or until lightly brown). Cool completley and invert onto a platter. Slice and top with White Chocolate Raspberry Whip cream (recipe below) and fresh raspberries (if desired).

*Feel free to expiriment with other creamer flavors!

White Chocolate Raspberry Whip Cream
I still had coffee creamer left, so I decided to mix it up into a yummy whipped topping for the pound cake.

1 c. International Delight White Chocolate Raspberry Coffee Creamer
1/2 c. Heavy Whipping Cream

Add both ingredients to a bowl and whip to desired consistency.
