Zesty Potato Salad

I think everyone has a go to potato salad recipe in their box.  I like to try so many new recipes that I often forget to look in that box {mine is blue… with handwritten, newspaper and typed recipes somewhat organized}.

This recipe came out of the box this week.  A basic recipe that everyone would love.  It was quite the hit with the family… at least those that like potato salad – if you know what I mean. ;-)

4x6 DSC_0067menu Zesty Potato Salad

  • 3 pounds red potatoes
  • 1/2 cup green onions
  • 1/2 cup chopped celery
  • 1 Tbsp. dijon mustard
  • 3/4 cup  mayonnaise
  • 1/2 cup Italian dressing

Cut red potatoes into large chunks.  Boil until just soft {about 7 minutes}.  Drain and set aside.

Mix remaining ingredients.  Toss with potatoes.  Serve warm or chill until ready to serve!

    Oh! This recipe is going into my notebook! I finally got rid of my box (which was actually a corner in the cupboard) and made myself a notebook. It was a fun winter project.
